Oyster Sauce Stewed Chicken (耗油焖鸡)

INTRODUCTION

In my kids’ view, my wife is a great cook because she can cook something like a black omelette as in the picture below.. Haha… Hmmm, I knew how to cook this but but I refused to cook this.. My wife practically has no problem of cooking a decent meal for the family but she like to cook this because she was deprived of eating this simple household dish when she was young… And this simple dish that she cooked make her a better cook than me in my kids’ eyes…

They also viewed their grandma as the kitchen heroine because she always cooked this simple chicken stew as in this post… She just put everything in a pot and come out a dish that is well liked by the family including me…However, I seldom cook this because i always have endless choices in my dining table..

There is once I posted this dish in a Facebook Group with the intention of telling members that my kids loved my mother in law’s cooking especially this dish.. There are quite a number of members asking for recipe.. I was a bit shocked as I have classify this dish as a very fast and simple this and I assumed most granny or house chefs will know how to cook.. I did not issue the recipe earlier because I deemed it as an extremely simple recipe ..

Since with member’s request, I have decided to share my humble recipe.. It is really humble as it is a one step recipe without any skills except some observations on the texture of the meat. Well, since I am also compiling a simple household recipe series, I thought this recipe may fit with the schedule of busy housewife.

There is nothing much I can write about this recipe.. It is a chicken stewed flavoured by oyster sauce. However, that familiar combo of colloquially called ABC soup will appear in this recipe. If you like that simple household soup, you will definitely like this chicken dish too..

WHAT IS REQUIRED

Servings: 4-5 Adult Servings

  • 500 grams of chicken parts of your choice (i use chicken winglets)
  • 2 onions, cut in chunks
  • 1 medium size carrots, cut in big pieces
  • 5 fresh sh*take mushroom or dried mushrooms , cut in big pieces
  • 3 potatoes, cut in big pieces
  • 2 tablespoons of oyster sauce
  • 2 tablespoons of caramelized dark soya sauce
  • Salt to taste

STEPS OF PREPARATION

  • Rub the chicken winglets with caramelized dark soya sauce and let it marinate for 1/2 hour . This step is optional if you are running short of time.
  • Put all the ingredients in a pressure cooker and put water until half of the height of the ingredients (about 1 cup depending on size of your pot). As more vegetable juices and meat juices will be secreted when cooked, therefore, there is no need to have a lot of water. Pressure cook for 15 minutes. Let the chicken sit in the pressure cooker until it is completely cooled. Open the lid and add salt to taste. Best served warm with steaming white rice.

Note:

  • Chicken can be cooked rather fast. There is no need to use pressure cooker if you are not short of time. You can always boiled over the stove until the chicken is soft which took about 30 minutes depending on size and parts of your chicken used.
  • If you prefer less gravy, after pressure cooking, you can transfer to the stove and boil to thicken the gravy. We prefer to have more gravy as kids like to eat the rice with the gravy. Alternatively, you can add some starches to thicken the gravy.

CONCLUSION

Is it not this recipe very simple? Though simple, it yields a great taste. It was flavoured beside oyster sauce the sweetness of the various vegetables. It is a healthy stew as you can note that I did not use even a drop of oil. All the fats are from the chicken, if any. Ah ma dishes are always simple and simplicity can be delicious as well. Lastly, this dish is especially good for someone who is sick which is nutritious and less oily,
